The Wild Salmon Are Running – All Over SALUT BAR AMÉRICAIN’s Summer Menu
Minneapolis, April 27, 2009. Gallic charm, French kisses and gifts of Gauloise cigarettes did the trick: SALUT BAR AMERICAN has seduced its seafood suppliers into securing just-caught, sustainable Alaskan salmon for both the Edina and St. Paul locations all summer long.
Salmon season begins mid-May
Fishing on Alaska’s Copper River starts around May 20 and will be reflected on the Salut menu within days. Yukon River salmon will follow, along with salmon caught in William Sound, Bristol Bay and other locations.
“I’ll be pulling in King/Chinook, Sockeye and Keta salmon from at least four separate river systems,” says Jeff Anderson, executive chef at SALUT in St. Paul, “and we’ll feature them singly and in combination with one another.”
Can’t get to Alaska? Catch a flight at SALUT
“The best way to appreciate the variety of flavors is in a flight of salmon,” explains Matt Kempf, executive chef of Salut in Edina. “It could be a trio of filets from three different species with three sauces, or a plate that showcases a single type of fish in three forms –perhaps smoked, cured and as a crudo or tartare.”
Both SALUT locations will also feature entrée specials, including pan-seared Copper River King salmon with ramps, fingerling potatoes and black garlic beurre; Grilled Yukon Keta salmon with cedar-maple BBQ sauce and sweet potato fries; and other dishes based on availability of accompanying ingredients.
A fish richly suited for wine pairings
Belying the notion that fish fare should be accompanied by white wines, the richness of Alaskan salmon often demands an appropriately paired red, says Krista Van Moorlehem, general manager of SALUT on Grand Avenue. “Our wine pairings will include Evesham Wood Pinot Noir from Oregon and Drouin La Foret Burgundy from France, along with other suggested reds and whites.
A world apart from supermarket salmon
Deeply flavorful, meltingly tender, and rich in nutrients, just-caught wild Alaskan salmon occupies a category of its own in the hearts of fish connoisseurs and health experts alike.
Consider the Copper River Salmon, which must navigate 300 miles of cold, raging water to reach its spawning grounds. The nature of the trek yields an exceedingly robust fish with a rich store of natural oils and body fat.
Yukon River Salmon endure an even more arduous journey, swimming 2,000 miles from the Bering Sea to the Yukon River, and they have the fat content to prove it: up to 34% Omega 3’s. “You barely even need to chew this fish,” says Anderson. “It just melts in your mouth, flooding your palate with unbelievable flavor.”
Adding to the allure of Yukon River Salmon: the fact that for almost 30 years the entire supply was bought up the Japanese for their sushi market. “Finally – under very limited conditions, for a very limited time – it’s now available in the United States. And SALUT will be one of the very few Minnesota restaurants where Yukon River salmon will be served,” says Anderson.
Availability expected through August
A number of factors affect the availability of wild salmon, including the quality of the year’s harvest and day-to-day weather conditions, explains Anderson. But even though SALUT cannot guarantee quantity and variety on any given day, the nature of Parasole’s relationships with its fish suppliers promises a steady stream of salmon well into August.
“Even if we have just one order left, and instead of getting two entrees you share one as an appetizer, it’s worth it, says Kempf. “Honestly, you haven’t had salmon until you’ve experienced just-caught Alaskan wild salmon,” he continues. “There’s just no comparison to that artificially pink farmed stuff.”
